About the dish

Som tam is a salad of unripe, firm papaya cut into thin strips and lightly pounded in a clay mortar with garlic, chilli, palm sugar, fish sauce and lime juice. Cherry tomatoes, yardlong beans, dried shrimp and peanuts are added, so it is hot, sour, salty and sweet all at once. It belongs to the cooking of Laos and Isan but is now eaten all over Thailand, usually with sticky rice and grilled chicken. Versions with salted crab or fermented fish are funkier and fierier.

  • lime
  • fish sauce

Method

  1. Pound the garlic and chillies to a coarse paste in a large mortar.

  2. Add the palm sugar, fish sauce and lime juice and grind until the sugar dissolves.

  3. Add the beans, tomatoes, dried shrimp and peanuts and bruise them lightly so they release their juices.

  4. Add the papaya and alternately pound it gently and turn it with a spoon until the strips soften and soak up the dressing.

  5. Taste and adjust so it is clearly hot, sour and salty with a hint of sweetness; serve at once with sticky rice.
