Cuisine
Thailand
Thai cooking is famous for balancing hot, sour, salty and sweet, built from chilli, lime, fish sauce and palm sugar. Rice is the base – fragrant jasmine rice in the centre and south, sticky rice in the north and Isan – alongside fresh herbs, lemongrass, galangal and coconut milk. Meals are shared, with several dishes eaten at once with a spoon and fork, and street-stall food is part of everyday life.
