About the dish

Larb is regarded as one of the most important dishes of Laos and a fixture of festive meals. It is a salad of finely chopped meat – pork, chicken, beef, duck or fish – briefly cooked and dressed with lime juice, fish sauce or padaek, chilli and lots of mint, coriander and shallot. Its nutty aroma and slight crunch come from khao khua, sticky rice toasted dry and ground to a powder. It is eaten with the fingers, with balls of sticky rice and raw vegetables such as cabbage, yardlong beans and cucumber. A very similar larb is hugely popular in north-eastern Thailand.

Recipe

Larb

Ingredients

4 servings

Method

  1. Toast the rice in a dry pan, stirring, for 8–10 minutes until golden brown, then grind it to a coarse powder in a mortar or spice grinder.

  2. Put the meat and water in a pan with no oil and cook, breaking it up with a spatula, until no longer pink, about 5 minutes.

  3. Take off the heat and immediately stir in the lime juice, fish sauce and chilli.

  4. Add the shallots, spring onions, mint, coriander and 1–2 tbsp of the toasted rice and toss gently.

  5. Taste – larb should be sour, salty and hot; add more lime or fish sauce if needed.

  6. Serve warm or at room temperature with sticky rice and raw vegetables.
