Cuisine
Laos
Lao cooking is built around sticky rice, eaten with the fingers from small woven baskets, together with fiery salads, herbs and grilled meat and Mekong fish. Its signature flavour comes from padaek, a thick fermented fish sauce, along with galangal, lemongrass, chilli and fresh mint. Many dishes are shared with the neighbouring Isan region of north-eastern Thailand.
