About the dish

Khao niao mamuang is Thailand’s favourite dessert, and its season is the hot months from March to May, when mangoes are at their sweetest. Steamed sticky rice is mixed while hot with coconut milk, sugar and a pinch of salt so that it absorbs them and turns glossy and soft. It is served with slices of ripe yellow mango, topped with a thicker, slightly salty coconut cream and sprinkled with crunchy toasted mung beans or sesame seeds. The contrast of sweet, salty and fruity makes it a street-stall favourite.

Mango sticky rice

Ingredients

4 servings

Method

  1. Rinse the rice several times, cover with cold water and leave to soak for at least 4 hours or overnight.

  2. Drain the rice, spread it on a cloth in a steamer basket and steam for about 25 minutes until the grains are translucent and tender.

  3. Meanwhile warm 250 ml of the coconut milk with the sugar and 1/2 tsp salt, stirring until the sugar dissolves – do not boil.

  4. Tip the hot rice into a bowl, pour over the sweet coconut milk, stir, cover and leave for 20 minutes to absorb it.

  5. Heat the remaining 150 ml coconut milk with the rest of the salt and the flour mixed with a little water until lightly thickened.

  6. Peel the mangoes and slice them along the stone.

  7. Spoon the rice onto plates with the mango alongside, drizzle with the salty coconut cream and sprinkle with mung beans or sesame.
