About the dish

Ajvar is a relish of roasted red peppers made in autumn, when peppers are at their sweetest and cheapest. The pods are roasted over a fire or in the oven, peeled of their charred skins, chopped or minced, then cooked for hours with oil until the relish thickens and its flavour deepens. Some versions also include roasted aubergine, garlic or hot pepper. Ajvar is served with grilled meats, with bread and cheese, as a starter and alongside almost anything. In North Macedonia and Serbia making it is a family ritual, and homemade jars are a point of pride.

Main ingredients

  • red peppers
  • aubergine
  • sunflower oil
  • garlic
  • vinegar
  • salt

The “vegetarian” and “vegan” labels refer to the recipe shown, not to every version of the dish.

North Macedonia: In autumn whole families roast peppers in yards and on balconies and cook ajvar for the winter.

Serbia: In Serbia, ajvar from the Leskovac area is particularly prized.

Method

  1. Roast the whole peppers and aubergine in an oven heated to 230°C (or over a flame), turning, for about 30–40 minutes until the skins are well charred.

  2. Put the vegetables in a bowl, cover and leave for 15 minutes to steam the skins loose. Peel them, remove the seeds and leave to drain in a sieve for half an hour.

  3. Chop or mince the flesh coarsely, together with the garlic and the chilli if using.

  4. Heat half the oil in a wide heavy-based pot, add the pepper mixture and cook over low heat, stirring often.

  5. Gradually add the rest of the oil and cook for 1.5–2 hours, until the relish is thick and oil starts to pool on top. Season with salt, sugar and vinegar.

  6. Spoon the hot ajvar into sterilised jars, seal and turn upside down to cool.
