Cuisine
Uganda
Ugandan food grows out of exceptionally fertile soil. Pride of place goes to matooke, green cooking bananas steamed in their leaves and mashed, alongside maize posho, cassava, sweet potatoes and beans. The starches come with thick groundnut sauces, meat stews or fish from Lake Victoria, and on special days luwombo, meat steamed in banana leaves. Indian influence shows in chapati, which gave rise to the street favourite known as the rolex.
