About the dish

The rolex is a Ugandan snack whose name is a pun: “rolled eggs”, said quickly, sounds like the Swiss watch. The vendor fries a thin omelette with shredded cabbage, tomato, onion and pepper on a griddle, lays a fresh chapati on top and rolls it all up into a tight wrap. It began as a cheap meal for students around Kampala and is now sold across the country at any time of day. It is filling, inexpensive and made right in front of you.

Ingredients

2 servings

Method

  1. Finely dice the tomato, onion and pepper and mix them with the cabbage.

  2. Beat 2 eggs in a bowl with half the vegetables and a pinch of salt.

  3. Heat a spoonful of oil in a frying pan, pour in the egg mixture and spread it to the size of the chapati.

  4. When the base has set, lay a chapati on top and press it down, then after a minute flip everything chapati-side down and warm for 30 seconds more.

  5. Slide it onto a board omelette-side up, roll it tightly and cut in half; repeat with the rest of the ingredients.
