About the dish

Horiatiki, or village salad, is the simplest and best-known dish of the Greek summer. Chunky ripe tomatoes, cucumber, red onion and green pepper go into a bowl with Kalamata olives, topped with a whole thick slab of feta that everyone crumbles for themselves. The whole thing is sprinkled with dried oregano and generously dressed with olive oil, sometimes with capers or paximadia rusks added. There is no lettuce and no ready-made dressing – the flavour depends on the quality of the tomatoes, oil and cheese. The tomato juice and oil left in the bottom of the bowl are mopped up with bread.
