About the dish

Souvlaki are small skewers of meat – usually pork, less often chicken or lamb – marinated in olive oil, lemon juice, garlic and oregano and cooked over charcoal. It is Greece's most popular fast food: every town has stalls and tavernas called souvlatzidika, where the skewers are eaten on a plate with chips and salad, or wrapped in warm pitta with tzatziki, tomato and onion. It should not be confused with gyros, which is meat roasted on a vertical spit and shaved into thin slices. Souvlaki are also a fixture of summer barbecues.

Main ingredients

  • pork shoulder
  • olive oil
  • lemon
  • garlic
  • oregano
  • pitta
  • tzatziki

Cyprus: In Cyprus souvlaki comes in a large pitta with salad, and at weekends bigger pieces of meat are spit-roasted as souvla.

Greece: On the street mostly as pita souvlaki – wrapped in pitta with tzatziki, tomato, onion and chips.

Method

  1. Cut the meat into 3 cm cubes. Mix the oil, lemon juice, crushed garlic, oregano and pepper, coat the meat in it and marinate in the fridge for 3 hours or overnight.

  2. Soak wooden skewers in water for 30 minutes so they do not burn.

  3. Thread the meat onto the skewers, 5–6 pieces each, and salt just before cooking.

  4. Grill the souvlaki over high heat for 10–12 minutes, turning, until browned outside and juicy inside.

  5. Warm the pittas on the grill and slice the tomatoes and onion.

  6. Serve the meat slid off the skewers onto pitta with tzatziki, tomato and onion, with a squeeze of lemon and a pinch of oregano.
