About the dish

Halloumi is Cyprus's traditional cheese, made from sheep's and goat's milk, often with some cow's milk added. Once the curd has set it is heated in hot whey, folded in half, sprinkled with dried mint and kept in brine. This gives the cheese a firm, slightly springy texture that does not melt over heat – on a grill or in a pan it forms a golden crust while softening inside. In Cyprus it is eaten grilled as meze, in pitta with salad, for breakfast with tomatoes and olives, and in summer with watermelon. Fresh, uncooked halloumi is also sliced into salads and grated over pasta.

Main ingredients

  • halloumi cheese
  • olive oil
  • lemon
  • dried mint or oregano

Cyprus: Called hellim in Turkish. In summer Cypriots love to eat halloumi with a slice of cold watermelon.

Method

  1. Pat the cheese dry with kitchen paper and cut into slices about 1 cm thick.

  2. Heat a griddle pan or grill until very hot and brush lightly with oil.

  3. Grill the slices for 2–3 minutes on each side until marked with golden stripes – do not move them too early or they will stick.

  4. Transfer to a plate, squeeze over the lemon juice and the rest of the oil, and sprinkle with mint and pepper.

  5. Serve straight away while warm, with pitta and salad or with slices of cold watermelon.
