About the dish

Banitsa is Bulgaria's best-known pastry: sheets of thin dough are layered or rolled with a filling of crumbled sirene cheese, eggs and yoghurt and baked until golden. It is classically eaten warm for breakfast, with ayran or boza – a thick, lightly fermented grain drink. Besides the cheese version there are banitsas with spinach, leeks or sauerkraut, and sweet ones with pumpkin. Banitsa also has a ritual role: on New Year's Eve fortunes for the coming year are hidden in it, and each member of the household reads the one that turns up in their slice.

Main ingredients

  • filo pastry
  • sirene cheese
  • eggs
  • yoghurt
  • butter or oil

Bulgaria: On New Year's Eve and at Christmas, banitsa is baked with hidden fortunes (kasmeti) – wishes written on slips of paper wrapped in foil.

Ingredients

Method

  1. Heat the oven to 200°C and grease a round tin about 28 cm across.

  2. Mix the yoghurt with the bicarbonate of soda and leave for a few minutes until it foams. Add 3 eggs and the crumbled cheese and mix with a fork.

  3. Lay out a sheet of pastry, brush with butter and spread 2–3 tablespoons of filling over it. Roll it up loosely along the long side.

  4. Coil the roll into a spiral in the tin from the centre, adding more rolls until the tin is full.

  5. Beat the last egg with the sparkling water and remaining butter and pour it over the banitsa. Bake for 35–40 minutes until golden and crisp.

  6. Cover with a cloth for 10 minutes, then cut and serve warm with yoghurt or ayran.
