About the dish

Tarator is a Bulgarian cold soup of yoghurt thinned with cold water, with finely diced or grated cucumber, garlic, dill, oil and chopped walnuts. It is light, refreshing and very quick to make, so in summer it appears on the table almost every day, often with ice cubes. It is served as a first course or sipped alongside grilled meat. The key is good, thick, slightly tangy yoghurt – in Bulgaria that means kiselo mlyako, for which the country is famous. Neighbouring cuisines know similar yoghurt and cucumber soups.

Main ingredients

  • yoghurt
  • cucumber
  • garlic
  • dill
  • walnuts
  • sunflower oil

Albania: In Albania, taratorë – thicker, and served more as a meze than a soup.

North Macedonia: In North Macedonia it is served as a refreshing side on hot days.
