About the dish
Flija is a traditional dish of Kosovo and northern Albania that demands more patience than skill. A thin batter of flour, water and salt is poured onto a round tray in spokes, baked under a glowing saç lid, then brushed with cream or butter before more batter fills the gaps. This is repeated a dozen or more times, building a thick layered pie whose cross-section looks like the rings of a tree. Making flija takes several hours and often involves the whole family or the neighbours. It is served with honey, yoghurt, cheese or pickled vegetables.
