About the dish

Shiro is a thick, creamy stew made from chickpea, broad bean or pea flour that has been ground with garlic, ginger and berbere. It cooks quickly on a base of fried onion and tomato, the flour thickening the sauce within minutes. On fasting days, of which Ethiopian and Eritrean Orthodox Christians keep well over two hundred a year, it is made with oil; at other times it is often enriched with niter kibbeh. It is served on injera, frequently in a small clay pot that keeps it bubbling at the table.

Main ingredients

  • shiro powder (spiced chickpea or broad bean flour)
  • onion
  • tomato
  • garlic
  • oil
  • berbere

Eritrea: One of the most popular everyday dishes in Eritrea, often served bubbling in a clay pot.

  3. Pour in the hot water and bring to the boil.

  4. Sprinkle in the shiro powder in a thin stream, whisking constantly to prevent lumps.
