About the dish

Kitfo is finely minced lean beef mixed with warm niter kibbeh and the fiery spice blend mitmita. It is traditionally eaten raw, though many people order it lightly warmed (leb leb) or fully cooked (yebesele). It comes with fresh ayib cheese, braised collard greens called gomen, and injera or kocho, a flatbread made from false banana. It is a celebratory dish and a favourite order in Addis Ababa restaurants, often shared with family.

Ingredients

Method

  1. Trim the beef of sinew and fat, then chop it with a sharp knife into a very fine mince.

  2. Chop the onion, fry it in a spoonful of oil, add the sliced greens and braise for 10 minutes, seasoning with salt.

  3. Melt the niter kibbeh in a small pan and stir in the mitmita and cardamom.

  4. Take the butter off the heat, add the beef and mix quickly; for the leb leb version warm it through over low heat for 1–2 minutes.

  5. Season with salt and serve at once with the cheese, greens and injera.
