About the dish

Zigni is one of Eritrea’s signature dishes: pieces of beef (sometimes lamb or chicken) slowly simmered in a thick red sauce of onions, tomatoes and plenty of berbere. Compared with Ethiopian wat the sauce tends to be more tomato-rich, something often put down to Italian influence. It is served on a shared tray lined with injera, frequently alongside shiro and vegetables, especially on holidays and at gatherings.
