About the dish

Rendang is a dish of the Minangkabau people of West Sumatra, cooked for ceremonies, weddings and holidays. Pieces of beef are simmered for a very long time in coconut milk with a paste of chilli, shallots, garlic, ginger, galangal and turmeric, together with lemongrass and kaffir lime and turmeric leaves. Over several hours the milk cooks down until only an oily, dark brown, intensely spiced coating clings to the meat – cooked like this, rendang kept for a long time and was taken on journeys. The earlier, wetter stage is called kalio. It is eaten with rice, and in Malaysia and Singapore also with ketupat for Hari Raya. Readers’ polls by CNN Travel have named rendang the most delicious food in the world.

Method

  1. Blend the shallots, garlic, both kinds of chilli, ginger, galangal and turmeric with a little coconut milk to a smooth paste.

  2. Put the paste, coconut milk, lemongrass, lime leaves and turmeric leaf in a wide pot and bring to the boil, stirring.

  3. Add the beef, tamarind, sugar and salt and simmer uncovered over low heat, stirring every 10–15 minutes.

  4. After about 1.5–2 hours the sauce will thicken and the oil begin to separate – this is the kalio stage; from now on stir more often.

  5. Keep cooking over very low heat for another 1–1.5 hours, stirring constantly towards the end, until the sauce has cooked away, darkened and coats the meat.

  6. Taste, adjust the salt and leave for 15 minutes before serving with rice.
