About the dish

Gado-gado, roughly ‘a mix’, is an Indonesian salad especially associated with Jakarta and Betawi cooking. It brings together briefly cooked or raw vegetables – green beans, cabbage, bean sprouts, water spinach – with potatoes, boiled egg, fried tofu and tempeh, and often pieces of lontong rice cake. Everything is generously dressed with a sweet and spicy sauce of roasted peanuts, chilli, palm sugar and tamarind, then topped with fried shallots and emping or krupuk crackers. Vendors grind the sauce for each customer in a stone mortar, adjusting the heat to order. It is a filling yet fresh lunch dish.

Method

  1. Boil the potatoes in their skins and hard-boil the eggs, then peel and quarter them.

  2. Blanch the beans (3 minutes), cabbage (1 minute) and spinach and sprouts (30 seconds each) one after another in salted boiling water and refresh in cold water.

  3. Slice the tofu and tempeh and fry until golden in hot oil.

  4. Blend or pound the peanuts, garlic and chillies to a coarse paste.

  5. Add the sugar, kecap manis, tamarind and salt and gradually add the water until the sauce is thick but pourable.

  6. Arrange the vegetables, potatoes, cucumber, tofu, tempeh and eggs on plates, pour over the sauce and scatter with fried shallots; serve with the crackers.
