About the dish
Kompot is a home-made drink of Central and Eastern Europe: fruit – apples, sour cherries, strawberries, rhubarb, plums, currants – is simmered briefly in water with a little sugar and then cooled. The drink has a delicate fruity taste and a colour that depends on the fruit, and the cooked fruit stays in the jug. In Poland it was for years the obligatory drink with Sunday lunch and in school canteens, and in summer it is made from whatever is ripe in the garden. On Christmas Eve a compote of dried fruit – prunes, apples and pears – with a lightly smoky aroma is made.
