About the dish

Ful medames is made of small dried fava beans cooked very slowly, for hours, until soft and creamy. Before serving they are partly mashed and dressed with olive or other oil, garlic, lemon juice, cumin and salt, then topped with tomatoes, onion, parsley, chilli or a hard-boiled egg. It is eaten with flatbread, used to scoop the beans from the plate. In Egypt and Sudan it is the basic, cheap breakfast, and during Ramadan a pre-dawn meal too; similar dishes are known across the Middle East.
