Cuisine
Egypt
Egyptian food is above all bread, pulses, rice and vegetables – cheap, filling and very much street food. Fava beans, lentils, chickpeas and leafy greens have fed people along the Nile for thousands of years, while Ottoman, Levantine and Mediterranean influences brought stuffed vegetables, kebabs and sweet pastries. The long Coptic fasts mean that many classics, such as koshari and ta'meya, are naturally vegan.
