Cuisine
Armenia
Armenian cooking is built on wheat and bulgur, lamb and pork, the soured milk called matsun, cheese, fresh herbs and fruit – above all apricots. Every meal comes with thin lavash bread, baked on the walls of a clay tonir oven. Grilled meat, known as khorovats, is a must at any celebration, and the table is always rounded out with plates of herbs, cheese and pickles.
