About the dish

Ghapama is a whole pumpkin, hollowed out and filled with rice mixed with dried apricots, raisins, prunes, nuts, honey, butter and cinnamon. It is baked slowly until the flesh softens and the rice soaks up the pumpkin's sweet juices and the butter. It is carried to the table whole, then cut into wedges so that everyone gets pumpkin and filling. It is a dish for the winter holidays, when pumpkins from the autumn harvest are at their sweetest, and a fixture of the New Year and Christmas table in Armenia. Being both sweet and filling, it is served as a main course or as dessert.

  6. Transfer the pumpkin to a platter, cut it into wedges at the table and serve warm.
