About the dish
Štrukli come from north-western Croatia, especially the Zagorje region and the area around Zagreb. A dough of flour, water, egg and a little oil is stretched across a table so thin you can almost see through it, spread with a filling of fresh cheese, eggs and soured cream, rolled up and cut into pieces with the edge of a plate. Štrukli can be boiled in salted water and topped with buttered breadcrumbs, or baked under cream until the top turns golden. They are served as a starter, a main course or, in a sweet version, as dessert. The baked version is a particular favourite for Sunday lunch.
