About the dish

Sukuma wiki is Kenya’s everyday braised greens – usually collard greens, with kale the closest substitute – cut into thin ribbons and cooked briefly with onion, tomato and salt. The Swahili name means roughly “push the week”: the greens are cheap, grow in almost every garden and help a household stretch its budget until payday. It is served almost daily with ugali, often with a piece of meat or fish, and many cooks add a little minced meat or spinach.

Method

  1. Wash the leaves, remove the tough stems, roll a few at a time into a cigar and slice into very thin ribbons.

  2. Slice the onion and soften it in the oil over medium heat.

  3. Add the chopped tomatoes and chilli and cook for 4–5 minutes until the tomatoes collapse.

  4. Add the greens and salt and cook, stirring, for 5–7 minutes until wilted but still bright green.

  5. Serve straight away with ugali.
