About the dish

Momo are small dumplings of thin wheat dough, pleated into little purses or half-moons and steamed. They come from Tibetan cooking and have become one of Nepal’s most popular foods – in Kathmandu almost every eatery sells them. They are filled with buffalo, pork or chicken mixed with onion, garlic, ginger and coriander, or for a vegetarian version with cabbage, cheese and vegetables. They are served with a spicy achar of roasted tomatoes, sesame and chilli, and also pan-fried or swimming in a spicy broth as jhol momo. They are eaten in Bhutan, Tibet and the Himalayan regions of India too.

Method

  1. Knead the flour, water and a pinch of salt into a smooth, elastic dough, cover and rest for 30 minutes.

  2. Mix the meat with the onion, spring onions, garlic, ginger, coriander, spices, butter, salt and 2–3 tbsp water until the filling is juicy.

  3. For the achar, char the tomatoes under the grill or in a dry pan, then blend with the garlic, chillies, sesame, salt and lime juice.

  4. Divide the dough into about 32 balls and roll each into an 8 cm round, thinner at the edges than in the middle.

  5. Put a teaspoon of filling in the centre, gather the edge into pleats all the way round and twist the top closed to form a purse.

  6. Arrange the momo in an oiled steamer basket with space between them and steam for 10–12 minutes until the dough turns slightly translucent.

  7. Serve straight away, piping hot, with the achar.
