About the dish

Ema datshi is regarded as Bhutan’s national dish and shows best how the local kitchen treats chillies – not as a seasoning but as the main vegetable. In Dzongkha ema means ‘chilli’ and datshi ‘cheese’: large green or dried red chillies are cooked briefly with onion, tomato and garlic, then cheese is added and melts into a thick, creamy sauce. Traditionally a soft cheese made from cow’s or yak’s milk is used. It is eaten almost daily with red rice, and versions with potatoes (kewa datshi) and mushrooms (shamu datshi) are just as popular.

Ema datshi

Ingredients

4 servings

Method

  1. Put the chillies, onion and oil in a pan, cover with the water and simmer with the lid on for 8–10 minutes until the chillies soften.

  2. Add the garlic and tomatoes and cook for another 3–4 minutes.

  3. Add the crumbled cheese, cover and cook over low heat for 3–5 minutes until melted; stir gently so the sauce is thick and creamy.

  4. Season with salt (carefully, as feta is salty), scatter with coriander and serve with rice.
