About the dish

Mici, meaning “little ones”, are short skinless rolls of minced beef, often mixed with lamb or pork and seasoned with garlic, thyme, black pepper and paprika. Stock and a little bicarbonate of soda are worked into the mixture, which makes them especially juicy and springy once grilled. Romanians cook them on May Day, at fairs and at summer garden gatherings, and serve them with mustard, bread and chips or pickled vegetables. At roadside grills and markets they are one of the most ordered dishes.

Main ingredients

  • minced beef
  • minced pork or lamb
  • garlic
  • thyme
  • stock
  • bicarbonate of soda
  • mustard

Romania: Also called mititei; in Romania they are a must especially on 1 May.

Method

  1. Crush the garlic and mix it with the spices and salt.

  2. Combine both meats with the seasoning, add the bicarbonate dissolved in a little stock and knead by hand, gradually adding the rest of the stock until the mixture is sticky and even.

  3. Cover the bowl and refrigerate overnight so the flavours come together.

  4. With wet hands, shape rolls about 8–10 cm long and as thick as your thumb.

  5. Grill on a hot barbecue or griddle pan for 10–12 minutes, turning, until browned outside and juicy inside.

  6. Serve straight away with mustard and bread.
