About the dish

Mămăligă is cornmeal cooked until thick – for centuries the everyday bread of Romanian and Moldovan villages. It is made in a cast-iron pot and stirred with a wooden stick, then turned out onto a board and cut into slices with thread. It is served with salty sheep's cheese (brânză) and soured cream, with a fried egg, alongside sarmale, stews or braised fish. A baked version layered with cheese and butter is also popular, and yesterday's leftovers are fried in a pan. Similar cornmeal dishes are eaten across the Balkans and in Italy, where they are called polenta.

Mămăligă (cornmeal porridge)

Ingredients

4 servings

Method

  1. Bring the salted water to the boil in a heavy-based pot.

  2. Pour in the cornmeal in a thin stream, whisking hard all the time to stop lumps forming.

  3. Lower the heat and cook for 20–25 minutes, stirring with a wooden spoon, until thick and pulling away from the sides of the pot. Stir in the butter.

  4. Turn the mămăligă out onto a wooden board or plate and smooth it. Cut it with thread or a wet knife.

  5. Serve warm with crumbled cheese, soured cream and, if you like, a fried egg.
