About the dish

Kačamak is a filling dish from the mountains of Montenegro, where for generations it fed shepherds and farmers. Cornmeal is cooked with potatoes in salted water, then beaten long and hard with a wooden spoon until the mixture is smooth and firm. Finally, cheese – fresh or aged – and kajmak, a thick, slightly tangy cream skimmed from milk, are stirred in, making the kačamak stretchy and very rich. It is eaten hot, often for breakfast, with sour milk or yoghurt to drink. It is food for cold mornings and hard work.

Main ingredients

  • cornmeal
  • potatoes
  • cheese
  • kajmak
  • butter

Montenegro: Most typical of the mountainous north, such as the area around Durmitor; it is also eaten in Serbia and Bosnia.

Method

  1. Peel and dice the potatoes, cover with salted water and boil for 15 minutes until tender.

  2. Without draining, mash the potatoes right in the pot.

  3. Pour in the cornmeal in a thin stream, stirring constantly so no lumps form. Cook over low heat for about 20 minutes, stirring often.

  4. Beat the mixture with a wooden spoon for a few minutes until it is smooth and firm and comes away from the sides of the pot.

  5. Add the kajmak, crumbled cheese and butter and stir hard until melted and the kačamak is creamy and stretchy.

  6. Serve straight away, piping hot, with yoghurt or kefir.
