About the dish

Blini are Russian pancakes made from a milk batter, usually raised with yeast, fried thinly in a hot pan and piled into a tall stack, each one brushed with butter. In old folk belief the round golden blin stood for the sun, which is why it is the central food of Maslenitsa, the festive week that sees off winter. They are eaten in many ways: with soured cream and honey, with jam or curd cheese, with red caviar or herring, or rolled around a filling of meat or buckwheat. Older recipes replace part of the wheat flour with buckwheat flour.

Main ingredients

  • wheat flour
  • milk
  • eggs
  • yeast
  • butter

Russia: Most blini are made during Maslenitsa week, just before Lent.

Method

  1. Dissolve the yeast and sugar in 200 ml of the warm milk and leave for 10 minutes.

  2. Sift the flour into a bowl, add the salt, the yeast mixture and half the remaining milk and stir until smooth. Cover and leave somewhere warm for an hour.

  3. Beat in the eggs, the rest of the milk and the oil – the batter should be like pouring cream. Leave for another 15 minutes.

  4. Heat a frying pan and grease it lightly. Pour in a ladle of batter, swirl it thinly over the pan and cook for about 1 minute on each side.

  5. Brush each finished blin with butter and stack them on top of each other to keep warm.

  6. Serve warm with soured cream, jam or caviar.
