About the dish

Pelmeni are small, round dumplings of thin dough made from flour, egg and water, filled with raw minced meat and onion. They are especially associated with Siberia and the Urals, where families made them by the hundred in winter and froze them outside as a store for the long months ahead. They are boiled in salted water or broth and served with soured cream, butter, vinegar or mustard, sometimes in the broth itself like a soup. They are among the most popular dishes in Russian homes and canteens, and making them is often a whole-family affair.

Ingredients

Method

  1. Knead the flour, egg, water and salt into a smooth, fairly firm dough. Wrap it and leave for 30 minutes.

  2. Grate or mince the onion and mix it with the meat, iced water, salt and pepper into a juicy filling.

  3. Roll the dough out very thinly and cut out rounds about 5 cm across.

  4. Put half a teaspoon of filling on each round, fold in half, seal the edges, then pinch the two corners together to make a little ear shape.

  5. Boil the pelmeni in batches in salted water with the bay leaves for 4–5 minutes after they float.

  6. Serve with butter and soured cream, or in a bowl of hot broth.
