Mexico

Mexican cooking grows out of Aztec and Maya traditions – corn nixtamalised with lime, beans, squash, chillies, tomatoes and cacao – layered with Spanish influences and later Lebanese and French ones too. Everyday eating rests on tortillas, salsas and countless kinds of chilli, and every region has its own specialities: the moles of Oaxaca and Puebla, cochinita from Yucatán, seafood from the coasts. Traditional Mexican cuisine was added to UNESCO's list of intangible cultural heritage in 2010.
