About the dish

Guacamole is a dip of ripe avocado whose name comes from Nahuatl and means roughly “avocado sauce”. Avocados have been grown in Mexico for thousands of years, and the country is still the world's largest producer. In the classic version the fruit is crushed in a stone mortar (molcajete) with a little salt, white onion, hot serrano chilli and coriander, then finished with lime juice and diced tomato. Good guacamole is chunky, fresh and gently hot. It is eaten with crisp pieces of tortilla (totopos), alongside tacos, grilled meat and beans, or simply by the spoonful.

Ingredients

Method

  1. Finely chop the onion, chillies (deseeded if you prefer it milder) and coriander.

  2. In a mortar or bowl, crush half the onion, chilli and coriander with the salt to a moist paste.

  3. Halve the avocados, remove the stones, scoop out the flesh and mash it with a fork into the paste, leaving some chunks.

  4. Dice the tomato finely, discarding the watery seeds. Stir it into the avocado with the rest of the onion, chilli and coriander.

  5. Add the lime juice, taste and adjust the salt. Serve straight away with tortilla chips.
