Cuisine
Benin
Beninese cooking stands on maize, cassava and yam: maize flour becomes various pastes, including red amiwo, and yam becomes pounded igname pilée. They are served with sauces of tomatoes, leaves, okra and palm oil, with fish from the lagoons or meat. Fula herders in the north make wagasi, a soft cheese that is fried or added to sauces.
