About the dish

Trinxat is a simple dish of Pyrenean farming families, its name coming from the Catalan word for “to chop”. Boiled winter cabbage and potatoes are crushed together, mixed with garlic fried in fat and cooked in a pan like a thick cake until a golden crust forms on both sides. It is topped with crisp slices of smoked bacon, and sometimes with butifarra sausage or black pudding. It is a typical winter dish, cheap and filling, making the most of cabbage that turns sweeter after a frost. In Andorra, trinxat is served in many traditional restaurants called bordes, set in old stone barns.

Main ingredients

  • Savoy cabbage
  • potatoes
  • garlic
  • smoked bacon
  • olive oil or lard

Andorra: Also eaten in neighbouring Catalan Cerdanya; it is best made with winter cabbage after the first frosts.

Ingredients

Method

  1. Cut the cabbage into large pieces and peel and quarter the potatoes. Boil them together in salted water for about 25 minutes until very soft.

  2. Drain the vegetables thoroughly and crush them with a masher into a coarse mixture – not a smooth purée.

  3. Fry the bacon slices in a pan until crisp and set aside. In the fat left behind, with 2 tbsp of the oil, briefly fry the sliced garlic.

  4. Stir the garlic and fat into the cabbage and potato and season with salt and pepper.

  5. Heat the remaining oil in the pan, add the mixture, shape it into a thick cake and fry for 6–8 minutes until browned underneath. Flip it with a plate and cook the other side for another 5 minutes.

  6. Serve cut into wedges, with the crisp bacon on top.
