About the dish

Teh tarik, or ‘pulled tea’, is the favourite drink of Malaysian mamak restaurants and Singaporean kopitiams. A very strong brew of black tea is mixed with sweetened condensed milk and then poured many times from a height between two jugs, so that the stream forms a long arc. This cools the drink to a pleasant temperature, blends tea and milk thoroughly and builds a thick, creamy froth on top. Pulling tea is a showpiece skill, and Malaysia has even held competitions for it. It is drunk with roti canai or nasi lemak, or simply in the evening at a table with friends.

Ingredients

Method

  1. Bring the water to the boil, add the tea and simmer for 3–5 minutes until very dark and strong.

  2. Strain the tea through a fine sieve into a jug with a spout.

  3. Add the condensed and evaporated milk and stir.

  4. Pour the tea back and forth between two jugs 5–6 times, gradually raising the one you pour from – start low and over the sink, as the drink is hot.

  5. Pour into glasses or mugs so that a thick layer of froth stays on top, and serve at once.
