About the dish

Sinigang is a distinctly sour Filipino soup and one of the country’s most homely dishes. Its sourness most often comes from young tamarind, but guava, calamansi, green mango, kamias or santol fruit are also used. It is made with pork (sinigang na baboy), prawns, bangus milkfish or beef, with tomato, onion and vegetables: white radish, long beans, aubergine, okra, taro and kangkong water spinach. It is seasoned with patis fish sauce, and a long green chilli often goes into the hot bowl. It is eaten with rice, especially in the rainy season, and ready-made tamarind mixes make it quick to prepare.

Method

  1. Cover the pork with the water, bring to the boil and skim.

  2. Add the onion and tomatoes and simmer for 45–60 minutes until the meat is tender.

  3. Add the taro and cook for 10 minutes until it starts to break down and thicken the soup slightly.

  4. Add the tamarind, radish and beans and cook for 5 minutes.

  5. Add the aubergine, okra and chillies and cook for 3–4 minutes more.

  6. Season with fish sauce and extra tamarind – the soup should be clearly sour.

  7. Take off the heat, add the spinach just to wilt and serve at once with rice.
