Cuisine
Philippines
Filipino food combines native traditions with Chinese, Spanish and American influences. It loves bold sour and salty flavours – vinegar, tamarind, calamansi, soy sauce and patis fish sauce – and rice comes with almost every meal. Shared feasts and fiestas matter, as do grilled food and sweets made with coconut, purple ube and sticky rice.
