About the dish

Sabich is an Israeli pitta sandwich with roots in the cooking of Iraqi Jews – in Iraq fried aubergine and eggs slow-cooked overnight were eaten for Sabbath breakfast. The pitta is filled with slices of fried aubergine, hard-boiled egg, hummus and tahini sauce, a salad of finely diced tomatoes and cucumbers, parsley and amba – a tangy, spicy sauce of pickled mango with fenugreek. Spicy zhug and potatoes are often added too. Sabich is sold from small stands all over the country, with the best-known ones in Ramat Gan and Tel Aviv.

Method

  1. Slice the aubergines 1 cm thick, salt them and leave for 15 minutes. Pat dry with kitchen paper.

  2. Fry the slices in hot oil for 2–3 minutes on each side until golden and soft. Drain on paper.

  3. Hard-boil the eggs (10 minutes), cool them in cold water, peel and slice.

  4. Finely dice the tomatoes, cucumber and onion and mix with the chopped parsley, salt and lemon juice.

  5. Warm the pittas and cut them open to make pockets. Spread the inside with hummus.

  6. Fill with aubergine, egg and salad, drizzle with tahini and amba and serve straight away.
