About the dish
Roasted breadfruit and fried jackfish is the national dish of Saint Vincent and the Grenadines. Breadfruit – a large green fruit with starchy flesh – is roasted whole directly on coals or in an open fire until the skin is completely black and the inside is soft, fluffy and faintly smoky, tasting a little like fresh bread or a baked potato. The charred skin is peeled away and the flesh cut into wedges. It comes with jackfish, small fish of the jack family rubbed with lime, garlic and green seasoning, dredged in flour and fried until crisp. A sauce of onion, tomato and hot pepper is often spooned over the top. Breadfruit holds a special place on the island and is celebrated every year with a festival.
