About the dish

Raclette comes from the canton of Valais, where herdsmen warmed half a wheel of cheese by the fire and scraped the softened layer onto bread or potatoes. The name comes from the French racler, to scrape. Restaurants and mountain festivals still use special heaters for half-wheels, while at home people use electric grills with little pans in which everyone melts their own slice. Raclette is served with jacket potatoes, gherkins, pickled onions, freshly ground pepper and often cured meats. It is a typical winter and social dish, eaten slowly around a shared table over a whole evening.

Method

  1. Scrub the potatoes and boil them in their skins in salted water until tender, about 20 minutes. Drain and keep warm, for example in a bowl covered with a cloth.

  2. Set out the gherkins, onions, cured meats and seasonings on the table, with the sliced cheese on a plate.

  3. Heat the raclette grill. Each person lays a slice of cheese in their little pan and slides it under the heating element.

  4. When the cheese has melted and starts to bubble, after 2–3 minutes, scrape it with a wooden spatula over split potatoes.

  5. Sprinkle with pepper or paprika and eat with the gherkins and onions, making the next round as you go.
