About the dish

Poulet DG is a Cameroonian celebration dish whose name comes from “directeur général” – it was supposedly so lavish that only a company director could afford it. Chicken pieces are fried and then braised with carrots, green beans, peppers, tomatoes, onion, garlic, ginger and parsley. At the end they are combined with ripe plantains fried until golden, which give the dish a sweetish note. It is served at parties, on Sundays and in restaurants, usually as a one-pot meal.

  1. Blend half an onion with the garlic, ginger and parsley, rub the paste over the chicken and season with salt and pepper.

  2. Peel the plantains, slice them on the diagonal and fry them in oil until golden; drain on paper.

  3. In the same pan brown the chicken on all sides and set aside.

  4. In a wide pot soften the remaining onion in 2 tablespoons of oil, add the chopped tomatoes and fry for 5 minutes.

  5. Add the chicken and sliced carrots, pour in 200 ml of water and simmer, covered, for 20 minutes.

  6. Add the green beans, sliced peppers and chilli and cook for 10–15 minutes more until the chicken and vegetables are tender.

  7. Fold in the fried plantains, heat through for 5 minutes, season with salt and serve.
