About the dish

On Nauru, where there is little farmland, fish remain the most important local food – tuna and other species caught in the open ocean around the island, and reef fish. One of the most homely ways of cooking them is to simmer them in coconut milk with onion, garlic and tomato, with a little lime and chilli. The dish is quick to make, and the mild, creamy sauce goes well with rice, the basis of everyday meals. It is served at home, at family gatherings and on holidays, alongside other fish dishes and food borrowed from Chinese cooking.

  4. Pour in the coconut milk, bring to a gentle simmer and cook for 5 minutes.
