Nauru
Nauru is a tiny island whose interior was transformed by phosphate mining, so little is grown and most food – rice, flour, tinned goods and meat – is imported. Traditional fare was fish from the reef and the open ocean, coconuts, pandanus and breadfruit, and seabirds caught in nets at night. Fish, especially tuna, cooked with coconut milk is a favourite, as are dishes from the island’s small Chinese restaurants.
