About the dish

Naengmyeon is long, thin, springy noodles made from buckwheat flour, often with added starch, served in a bowl of ice-cold broth. It comes from the north of the Korean Peninsula, and the most famous is Pyongyang-style naengmyeon, with a delicate, slightly tangy beef broth mixed with the juice of dongchimi, a watery radish kimchi. It is topped with slices of beef, cucumber, pickled radish, slices of pear and half an egg, and everyone adds vinegar and hot mustard at the table. The other style, from Hamhung, uses starch noodles in a spicy chilli sauce with no broth. Traditionally a winter dish, it is now eaten mostly in the heat of summer.

Ingredients

4 servings

Method

  1. Simmer the beef with the water, onion, garlic and ginger over low heat for 1.5 hours, skimming as needed.

  2. Lift out the meat, strain and degrease the broth, season it with the soy sauce, sugar, vinegar and salt, then mix in the kimchi juice.

  3. Chill the broth in the fridge for at least 4 hours, then put it in the freezer for 30–60 minutes until it starts to turn slushy.

  4. Slice the cooled beef thinly.

  5. Cook the noodles according to the packet (usually 3–4 minutes), rinse several times in iced water, rubbing them between your hands to remove the starch, and drain.

  6. Arrange the noodles in bowls, top with the beef, cucumber, pear, radish and egg halves, and pour over the ice-cold broth.

  7. Serve at once with vinegar and mustard; the noodles can be snipped with scissors in the bowl.
