About the dish

Bulgogi, literally ‘fire meat’, is thinly sliced beef marinated in soy sauce, sugar, sesame oil, garlic, spring onion and grated Asian pear, which adds sweetness and tenderises the meat. Traditionally it is cooked on a table-top grill or a domed griddle with a channel that collects the juices, and at home in a frying pan. The flavour is mild, sweet-savoury and fragrant, which is why bulgogi is often one of the first Korean dishes visitors fall for. It is eaten with rice and banchan, wrapping pieces of meat in lettuce or perilla leaves with a little ssamjang paste and garlic.
