About the dish

Lohikeitto is a Finnish fish soup, simple and delicate, eaten all year round but especially in the colder months. Potatoes are simmered in fish or vegetable stock with leek or onion, carrot and allspice, and large chunks of salmon and cream go in at the end. The fish cooks for only a few minutes, so it stays moist, and the soup is finished with fresh dill. It has a pale, creamy broth and a gentle flavour. It is served with dark rye bread and butter. In some regions a clear version without cream is made.

Ingredients

Method

  1. Melt the butter in a pot and cook the leek for a few minutes until soft.

  2. Add the potatoes, carrot, allspice and bay leaf, pour in the stock and simmer for about 15 minutes until the potatoes are nearly tender.

  3. Pour in the cream and bring the soup back to a gentle simmer.

  4. Add the salmon and cook gently for 4–5 minutes until just done. Stir carefully so the fish does not break up.

  5. Remove the bay leaf, season with salt and pepper and stir in most of the dill.

  6. Serve sprinkled with the remaining dill, with dark rye bread and butter.
