About the dish

Lobio simply means beans in Georgian, and it is also one of the country's most everyday dishes. Red kidney beans are cooked until soft, partly mashed and simmered with fried onion, garlic, coriander and spices such as blue fenugreek and khmeli suneli, sometimes with ground walnuts. The result is thick, fragrant and filling, and during fasting periods it takes the place of meat. It is usually served hot in a clay pot with mchadi cornbreads, pickled vegetables and fresh herbs, though there are cold versions too, such as a bean salad with walnuts.

Main ingredients

  • red kidney beans
  • onion
  • garlic
  • coriander
  • blue fenugreek
  • sunflower oil

Georgia: Often served in a clay pot as lobio kotani, with mchadi cornbread and pickles.

Ingredients

4 servings

Method

  1. Soak the beans overnight in plenty of cold water.

  2. Drain, cover with fresh water, bring to the boil and simmer for 1–1.5 hours, until very soft. Drain, keeping some of the cooking water.

  3. Chop the onions and fry them in the oil until golden.

  4. Mash some of the beans, leaving the rest whole. Add the onion, the spices and enough cooking water to keep the dish thick but moist.

  5. Simmer together for 10 minutes, stirring. Stir in the crushed garlic, chopped coriander and vinegar and season with salt and pepper.

  6. Serve hot, ideally in a clay bowl, with cornbread and pickles.
